A Marine, A Grill, and Lessons that Last a Lifetime
This post is dedicated to my father-in-law, Horace “Chuck” Brown. Chuck was a Marine who achieved the highest enlisted rank of Sergeant Major. He served multiple combat tours during the Vietnam War and once humbly shared with me how he received a battlefield promotion for his heroism under fire. Yet despite those accomplishments, one of the greatest lessons he ever taught me had nothing to do with military service – it was barbecue.
Every Fourth of July, our family gathered at his home in Palm Desert, California. BBQ ribs, brisket, and chicken were usually on the menu. During my first visit, Chuck invited me to help with the grilling. Although I had cooked over campfires as a Boy Scout, I quickly realized I knew very little about real barbecue.
Patiently and without criticism, Chuck taught me the fundamentals. Over time, I became reasonably competent at the grill – though I am still far from being a pitmaster. On the bright side, I am proud to report no lawsuits have resulted from my cooking.
For those wondering, I still prefer charcoal briquets over gas and enjoy cooking with indirect heat, keeping the coals on one side of the grill and the meat on the other.

The word “barbecue” comes from the Caribbean term “barbacoa,” a method of slow-cooking meat over a raised wooden platform.

That mouthwatering brown crust on grilled meat comes from something called the Maillard reaction, a chemical process that creates complex flavors when food is cooked at high temperatures.

The largest barbecue ever recorded took place in Nuevo León, Mexico, where more than 45,000 people participated. That’s a lot of burgers, ribs, and potato salad.
5. BBQ Can Be Surprisingly Expensive
The world’s most expensive barbecue grill is reportedly the BeefEater Gold-Plated Grill, with a price tag of approximately $165,000. At that price, it had better cook the food and wash the dishes.
