Quick And Healthy Recipes For Kids

Getting healthy food into your kids can sometimes be a real challenge. Luckily there are lots of great recipes out there that can make eating healthy both fun and delicious for you and your kids. From breakfast to lunch to snacks and dinner time, here is a list of great meal ideas to get you through a healthy-eating day that won’t end with your child sitting at the table refusing to eat their veggies.

Breakfast Recipe: Rolled and Baked Omelets


Omelets are a great way to get healthy stuff like veggies and eggs into your kids but making one at a time can take too long and require a much bigger time commitment than many parents have. This method of making omelets gets it all cooked at once for easier mealtimes.

Ingredients:

  • 6 eggs 
  • 1 cup of low-fat milk 
  • 1/2 cup whole wheat flour 
  • 1 medium whole tomato 
  • 1/2 cup sliced vegetables such as mushrooms, peppers 
  • 2 oz cheddar cheese 
  • 1/2 cup salsa

Instructions:

  1. Preheat the oven to 450°F.
  2. Blend eggs, milk, and flour together until smooth and pour into a 13” x 9” well-greased pan.
  3. Add vegetables.
  4. Bake for 20 minutes or until eggs is cooked through.
  5. Top with cheese and salsa and roll up starting at the short end of the pan.
  6. Place on a platter, slice, and serve!

Lunch Recipe: Alphabet Pasta Salad

What kid doesn’t love alphabet noodles? This super-easy, super-healthy pasta salad is served cold meaning it can be easily made ahead of time so it is ready for a quick lunch or dinner. Make extra-large batches to keep on hand in the fridge or send with them to school.

Ingredients:

  • 8 oz pasta shapes
  • 1/2 cup chopped carrots, raw
  • 1/2 cup chopped celery, raw
  • 1/4 cup chopped green bell pepper
  • 1/4 cup pared, chopped cucumber
  • 1 medium whole tomato
  • 1/8 cup chopped onion
  • 1/4 cup Italian salad dressing
  • 3 oz Parmesan cheese

Instructions:

  1. Cook pasta until al dente.
  2. Rinse under cold water and drain.
  3. Mix chopped carrots, celery, cucumber, green pepper, tomatoes, and onion together in a large bowl.
  4. Add cooled pasta and pour Italian dressing over the mixture.
  5. Add cheese and mix well.
  6. Chill before serving.

Dinner Recipe: Avocado Pizza

This tasty and healthy alternative to delivery pizza is sure to tempt your kids to give their vegetables more respect and has plenty of nutrient-rich and delicious ingredients.

Ingredients:

  • 1 loaf of French Bread (whole wheat if possible)
  • Pizza Sauce
    • One 8 ounces can of tomato sauce
    • 1 tbsp water
    • Dash of Oregano
    • Garlic salt
    • Onion powder
  • Part-Skim Mozzarella
  • 1 Onion, chopped
  • Tomato, chopped
  • Avocado, chopped

Instructions:

  1. Preheat the oven to 425°F.
  2. Slice the French bread along the length of the loaf and open it.
  3. Place on a cookie sheet.
  4. Spread pizza sauce, cheese, and vegetables on the bread.
  5. Bake for about 10 minutes or until cheese is melted and veggies are tender.
