Ingredients (Makes 12 muffins)

  • 1 cup dried figs, stems removed and chopped
  • 2 large ripe bananas, mashed
  • 2 large eggs
  • 1/3 cup unsweetened applesauce
  • 1/4 cup maple syrup or honey
  • 1/4 cup milk (dairy or plant-based)
  • 1 tsp vanilla extract
  • 1 1/2 cups rolled oats
  • 3/4 cup whole wheat flour (or all-purpose)
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat & Prep:

Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease it.

  1. Soften the figs:

Place chopped figs in a small bowl and cover with hot water. Let soak for 5–10 minutes, then drain and set aside.

  1. Mix the wet ingredients:

In a large bowl, mash the bananas. Add eggs, applesauce, maple syrup, milk, and vanilla. Stir until well combined.

  1. Add the dry ingredients:

Stir in oats, flour, baking soda, cinnamon, and salt. Fold in the softened chopped figs.

  1. Fill the muffin tin:

Divide the batter evenly among the 12 muffin cups. Optional: sprinkle tops with a few extra oats for texture.

  1. Bake:

Bake for 20–22 minutes, or until a toothpick comes out clean. Cool in the tin for 5 minutes, then transfer to a rack to cool completely.
